Matsudai Ramen brings Supa Ya Ramen to Cardiff

Matsudai Ramen in Grangetown will welcome acclaimed chef, cookbook author, and boundary-pushing ramen creator Luke Findlay of Supa Ya Ramen to Cardiff on November 3rd; known for his inventive ‘inauthentic’ take on ramen, chef Luke brings his unique style and flavour combinations to Cardiff for the first time for an eagerly anticipated pop-up event.



 

Luke Findlay, the mastermind behind Supa Ya Ramen, has spent years honing his craft in some of London’s most renowned kitchens, from the veggie-forward Bubala to the Michelin-starred NOPI by Ottolenghi. 


After building a dedicated following with his Supa Ya Ramen pop-ups across London, Pakistan, and even Tokyo, he went on to open two beloved East London ramen spots and release his debut cookbook, Ramen Reinvented.

 

Now, after taking a short hiatus, Luke is set to bring his 'bonkers, brilliant food' to Matsudai Ramen's Cardiff restaurant for one unforgettable pop-up.

 

·      Expect reimagined Supa Ya classics, exciting Matsudai collaborations, and a range of small plates with plentiful veggie and vegan options.

·      Fan favourites include Luke’s Ham, Egg & Chips Mazesoba, or other signature dishes like his Cumberland Sausage Tantanmen and his Cheeseburger Ramen.

·      The kitchen will be open from midday until 8pm (or until sell-out), with bookings required via a £10 deposit, redeemable against your bowl on the day.

 

“I’ve always been a huge admirer of Luke’s and have been trying to bring Supa Ya to Cardiff for ages,” said Matsudai founder James Chant. “Before we opened Matsudai, we were close to doing an event at Luke’s Dalston shop, but it didn’t quite happen. Then we almost brought Luke to Cardiff last year, but it looks like the third time’s the charm!”

With UK-wide deliveries starting from November 8th, Matsudai has once again teamed up with renowned MasterChef Champion, cookbook author and Japanese food authority Tim Anderson to launch a couple of limited-edition Ramen Kits; the first is based on a ‘pizza ramen’ recipe from Tim’s book, Ramen Forever.

 

Chef Tim Anderson said, “If you’ve ever eaten pizza and thought, ‘I wish I could slurp this,’ your prayers have been answered! This pizza ramen kit combines the hot soupy comfort of ramen with the bold flavours of a Midwestern pizza pie, featuring a garlicky red sauce, light chintan broth, and classic pizza toppings over crinkly ramen noodles. It’s a steaming hot bowl of pizza!”

 

Chef Tim Anderson will also return to Cardiff in January for an exclusive pop-up event at Matsudai on January 19th, with tickets to go on sale later this month.

 

This will be the fourth time that Matsudai founder James Chant has collaborated with Tim; they have previously joined forces to create a limited edition ‘curry goat ramen’ with profits from the sale of the kits raising more than £3,800 for two mental health charities. Further collabs raised £2,212, which was split between Praxis UK and Oasis Cardiff, two organisations offering support to migrants and refugees, and for this most recent collaboration, £3 from the sale of each kit will go to Save the Children
